麻辣烫川味馆 - North York
身在多伦多,最大的幸福就是即使不回国,也可以品尝到色香味美的中国各地美食。其中,川菜以色美且有味被广大食客所钟爱。川菜并不是单纯的又麻又辣,可以将她比成千面佳人,有豪爽也有温柔,既阳刚亦含娇媚,有的时候川菜也会变得清淡爽口而犹抱琵琶半遮面,同样让每个人的唇舌毫不为过。有人说,麻辣的四川菜有种魔力,一旦尝过了就会上瘾。难怪那些品尝过“麻辣烫川菜馆”川菜的食客们,频频不由自主地当回头客。一个个坐在那店堂里,拼命享受那叫人欲罢不能的麻辣滋味。
第一次到麻辣烫是在两年前,一道水煮鱼片彻底把我征服。如果你要问好在哪里?吃得出但说不出,再问,就两个字:麻辣。上面红艳艳的一层辣椒油,晶莹剔透的红油下掩盖着零零散散的辣椒和花椒,四周的绿菜叶环绕着这红红的大太阳,让人想到绿叶配红花。看着那热油和着汤发出“滋滋滋”的美妙声音,一碗地道的水煮鱼片就呈现在你眼前了。吃上一块,鱼肉是又嫩又滑又软,带着咸辣麻的香滋味,而青菜就更辣了,而且是辣到了骨子里,让人对它爱恨交织,直到碗里只剩下红色的汤在荡漾着才肯罢手。
每次到"麻辣烫川菜馆",老板娘陈小姐都会拿出川妹子的热情给我们带位。"麻辣烫川菜馆"干净清爽的店面加上老板娘亲切的服务态度,让你有回家的感觉。老板娘在来多伦多之前在中国开了10多年的川菜馆,她和先生都是土生土长的重庆人,做出来的川菜当正宗地道,而且实惠。
"麻辣烫川菜馆"新来的大厨刘师傅是原重庆国宾馆特一级厨师,有着20多年的川菜烹饪经验。他烧出的菜品不仅色、香、味具全,而且更能体现出川菜特有的平民化,风味化、家常化的特色,让人回味悠长。人品决定菜品,“认真是你成功之本”,是刘师傅勉励自己的警名。“五味之变,不胜其尝”,刘师傅既熟知川菜菜品的特点,又擅长“巧用麻,善用辣”更是别的厨师无法比拟的。
"麻辣烫川菜馆"近来特别推出北美独家的魔芋鸭子、魔芋鱼片等“魔芋”系列。魔芋,又叫花秆莲、麻芋子等。它同芋头同属一个家族。魔芋是美味佳肴,《蜀都赋》言:“以灰汁煮即成冻,以苦酒淹食,蜀人珍之。”从营养角度看,魔芋是一种低热能、低蛋白质、低维生素、高膳食纤维的食品。近年来,魔芋食品以它奇特的保健和医疗功效而风靡全球,并被称为“魔力食品”。在中国,魔芋作为药品和食品利用已有2000多年的历史,用魔芋制作的食品被联合国卫生组织确定为十大保健食品之一。既能增加饱腹感,减轻饥饿感,又能降低体重,所以它又是糖尿病病人和养颜美容、体胖减肥者的理想食品。
除了魔芋鸭子,可以推荐给大家的川菜也非常多,比如色泽红润、辛香味浓的"风味鸡"。风味鸡是以肉嫩滑鲜甜且低脂健康的鸡肉为底蕴,加上由红酱油、姜蒜汁、芝麻酱、熟油辣椒、花椒油、白糖、醋、味精、红油、麻油于碗中对成的香汁淋在鸡条上,撒上芝麻、花生末、葱花等,让人觉得香口麻辣,集麻辣鲜香嫩爽于一身。另外,味美鲜香的□锅腰花也值得一试,□腰花也是近年来十分流行的一种烹饪方法,刘师傅刀功一流,先反刀斜剞,再直刀剞成三刀一断的眉毛形,用盐、白糖、味精、酱油、醋、料酒、湿淀粉、鲜汤兑成滋汁。它既保持了腰花口感的脆嫩,又咸鲜醇厚,一点都没有腥臊气味。
如果你是去吃午餐,可以试试麻辣烫的招牌牛肉面!牛肉都是非常熟嫩的条状,带筋牛肉柔软多汁,极为美味。牛肉面的汤头是经过长时间熬制而成,把潜藏在牛肉及牛骨的鲜味彻底解放。除了牛肉面,还有多种炒饭,炒面等特价午餐(饭、汤、豆浆任食)。
